Chocolate is one of the most beloved foods in the entire world. Unfortunately, many Americans only know about the mass-produced chocolate bars available at their local grocer. Good chocolate is a rich, velvety, melt-in-your-mouth treat that should be savored. There are several excellent chocolatiers throughout the world that export their product to the U.S., but did you know that you can get gourmet chocolate bars made in Austin TX? Not only that, but these chocolate bars can be customized with a potpourri of toppings to create treats that are both exquisite and unique.

Chocbite is a custom chocolate company based in Austin, Texas. The company was founded by Adeline Rem who began her company with a quest to find the perfect piece of chocolate. Realizing that different personalities love different chocolate toppings, she developed the concept of letting customers design their own perfect chocolate bar.

I was very excited to try out Chocbites, so our family sampled creations fashioned from both the semi-sweet and white chocolate varieties. For inspiration, I looked at the wonderful selection of predesigned chocolate bars offered on the Chocbite website. The bars are neatly organized into five categories so it is easy to find the type of bar you are looking for. Many of the flavor combinations are composed from ingredients I have never seen offered in a candy bar. However, the ingredients make sense to anyone who has ever cooked with chocolate or watched people cook with chocolate on television. This is just the first time I have seen so many delectable toppings paired with complementing chocolate varieties.

We customized our semi-sweet chocolate bar with peaches, pistachios, cayenne pepper, candied rose petals, and violet petals. I have read that cayenne pepper used to be added to chocolate by the Aztecs who considered chocolate to be sacred. I had never consumed rose or violet petals before but it sounded posh and the idea intrigued me.

The chocolate arrived in an insulated parcel with an icepack to prevent melting. The bar looked fantastic and inviting inside the clear packaging with the blue avant-garde label. A fake chomp taken off the corner of each bar complete the stylish Chocbite design. This bar makes a fun and unique gift for anyone. By adding some flower petals to the chocolate, it is even possible to give flowers and candy in one chic and original package.

There are options for decorative toppings that can be added for holidays or used to commemorate a special event. The website makes it easy to tell how the bar will look by providing a visual representation of your creation before you make a purchase!

For our white chocolate bar, we opted for the same ingredients minus the rose petals and cayenne pepper. We left the cayenne off,  mainly so our 4yo son River could eat it.

The chocolate is scored so it is easy to break off a single square or rectangle to share. River enjoyed his portion of chocolate immensely. The violet petals add beautiful color and a fantastic aroma to the rich white chocolate. The dried peaches and salted pistachios complimented the unique flavor of the delicate candied flowers very well.

The semi-sweet chocolate bar was my favorite of the two 3oz bars. I am all about dark chocolate, and the addition of peaches, pistachios, cayenne, rose petals, and candied violet petals made this an exquisite indulgence I will be talking about for years. The rose petals have a stronger flavor than the violets, but when added to the dark chocolate, creates an incredible sensory experience.  The cayenne pepper adds a touch of heat that really sets off the dark chocolate. Finally the sweet peaches and salty pistachios send my ship swiftly sailing into the sumptuous port of flavor island.
